These bacon wrapped stuffed shrimp make awesome grilled appetizers.
It's such an easy recipe, use larger shrimp, in the 16-20 size, stuff with goat cheese, sprinkle a little garlic powder and some optional lemon pepper and wrap in prosciutto, pancetta or regular bacon.
As soon as they come off the grill drizzle them with a little balsamic vinegar.
If using regular bacon partially pre-cook it first in the microwave before wrapping since the shrimp will be cooked long before the bacon would be so this equals things out.
I recommend prosciutto like the picture above. Available at most grocery stores, prosciutto is more salty and really adds to the flavor of this appetizer in my opinion.
These are very quick to cook, total of 6 minutes at 500F.

What you'll need:
Step 1:
Peel and devein the shrimp (unless you bought them already done) and rinse under cold water.
Pat dry with paper towels.
With a sharp knife carefully butterfly the shrimp so they'll hold some goat cheese.
Spoon a little goat cheese into each shrimp.
Place the goat cheese filled shrimp on a slice of prosciutto or pancetta or partially cooked bacon.
Sprinkle a little garlic powder and lemon pepper (optional) over top.
Roll up each shrimp in the slice of prosciutto and secure with a toothpick.
Step 2:
Preheat the grill to 500F and clean the grates.
Oil the grates well with canola or vegetable oil using a folded paper towel dipped in oil.
When the grills reached 500F place the bacon wrapped shrimp on the BBQ and close the lid.
After 3 minutes lift the lid and flip them over to cook the other side.
Close the lid for another 3 minutes.
After 3 minutes lift the lid and wiggle them to loosen them from the grates.
The bacon should be cooked and the shrimp should be opaque.
Remove the shrimp from the grill to a serving platter and drizzle with balsamic vinegar.
Serve immediately.
