Chicken and Shrimp are such a natural grilling combination and these garlic shrimp stuffed chicken breasts bring them together for you in one tasty package.
This is one of the more unique stuffed chicken recipes, apart from the fact it's stuffed with shrimp, the marinade recipe is loaded with garlic, cilantro and asian chili sauce.
Ready in half an hour these stuffed chicken breasts make a perfect weeknight meal served with noodles or rice as a side dish.
Reserve 1/2 cup of the marinade to drizzle over the grilled chicken and shrimp after they come off the barbecue.

What you'll need:
Step 1:
In a medium bowl prepare the chicken marinade recipe by combining the olive oil, garlic, paprika, chili sauce and chopped roasted red peppers.
Stir well to combine all of the ingredients.
Reserve 1/2 cup of this sauce to drizzle over the stuffed breasts when they're cooked.
Step 2:
Place a chicken breast between two sheets of plastic wrap and gently pound it flat to about 1/4" in thickness.
Try to keep the size uniform.
Place the flattned breasts in a resealable plastic bag and pour in the marinade.
Carefully distribute the marinade in the bag so all the meat is evenly covered.
Place the bag in a shallow dish to prevent leakage and refrigerate 4 hours up to overnight.
Step 3: Place 6 or 7 peeled cooked shrimp on one half of each breast.
Fold the other half of the breast over the shrimp and tie it up in several places to hold the shrimp inside the chicken.
Step 4: Once the grills reached this cooking range place the stuffed breasts on the grill and close the lid.
After 6 or 7 minutes check the chicken and make sure it's browning up nicely underneath.
If you need to loosen the chicken from the grates use a long pronged BBQ fork to slip between the grates under the breasts and carefully begin prying it up.
Flip the chicken and continue cooking another 7 or 8 minutes or until fully cooked.
Watch they don't burn.
Once cooked, remove them from the grill and spoon or drizzle the reserved sauce over each piece.
Enjoy!
Remove the chicken breasts from the marinade and place them flat on your working surface.
Preheat the grill to 400F - 450F and clean and oil the grates well.
